Profile gasket replacement, what else?

What else would you guys do if you had to replace the profile gasket? A lot of crap has to be taken apart to get to it so I thought I'd ask your opinions.

Make sure you don't have a ton of carbon build up on the exhaust valves.  It's a good time to clean them up.  Make sure the head and block are still straight.  Make sure the valve guides aren't super worn and leaking.  Check the lifters and cams for potential issues.  It just depends if you are trying to keep the motor running or if you want to do some modification.  I'd just get a topend gasket kit and some new head bolts and slap everything back together if it's just a street car.  It's a great time to replace all the heater hoses, thermostat, plastic cooling passage, and water pump too.

Mechanic says it's leaking. He says I don't have to replace it asap but I'm anal. He said it's a good time to refinish the head then? Can't quite remember what he said. So I'm looking for details etc...

Depending on mileage and your bank account, I would look into some or all of these;
Timing chain system
oil pump
Thermostat
Waterpump
Lifters (look into VW lifters)

This would give you a nice freshened motor.
