My apologies, as I am mostly clueless as to headlight upgrades. But I am making progress!

Are these plug & play on my currently sealed beam 318is?

you can't (easily, if at all) put projector headlights into the sealed beam headlight buckets.

You would need to buy this pair of headlights, get corresponding bosch or hella hi beams, and the appropriate headlight buckets.
