Ok, basically wondering how to break the bolt that holds the clutch onto the waterpump. I can't get the bolt lose and can't figure out what to grab onto to hold the pulley from moving. Any advice would be much appreciated.

Tighten the belt snug. The clutch is reverse threaded. Get a bar to put a little pressure on the belt and put a crescent wrench on the fan clutch nut. Hit the end of the wrench with a hammer.

When I did this last weekend I used an allen wrench and wedged it so that it was held still by the bold head on the wp pulley and the thermostat housing. Then I used the cresent wrench and hammer method.
