I've seen that before and I am still amazed out how the guy can downshift. They are so smooth and quick that it just amazes me. He really knows how to handle the car too, you see how close he gets to walls on some of his drifts?!?

Did You see Mark Fleury hillclimbing ?
Theese downshifts... You "just" have to learn how to step on two pedals simultaneously /right part of Your right foot accelerates while left part of Your right foot is braking/ The idea is to accelerate between shifts to aim the same crank/tranny speed -> this speeds up shifts a lot ;)
It's not that hard, but needs A LOT of practice... I'll place some learning vids as soon as I will put my car together... :)

its definitely fun doin the down shifts like that... And once you learn, it feels like something is wrong when you do normal downshifts. So much smoother hitting the gas and brake at same time during downshifts as well, you don't get the shift shock from the motor.
