Not terribly difficult - remove all seats, remove the front seat belt lower mounts, remove the center console (complete), remove the sill plates at the doors. Pull up on the accelerator pedal, it clips in through the carpet. Now decide if you want to pull it in one piece or not.
I strongly recommend you do not unless you have a compelling reason - you'll have to remove the heater box, which entails draining the coolant, evacuating the refrigerant from the AC system, removing the dash, etc. It's a painful process that really doesn't get you anything, since the part under the heater box will not be visible when you are done.
If you've decided to cut, just cut the carpet up along the heater box to where it ends at the firewall. Cut as high as you can. Pull the old carpet out, match the part you cut out on the new carpet, reinstallation is the reverse of removal.
