so since the e36 doesnt have vanos, could i use the head from a 95 still, or would i have to use my stock one? and if i can use the head, will there be any gain from using the 91 cams in the 95 head?

No problems using the -95 head.
Probably not noticeable which cams you'll use.

ok. i probably wont bother changing them then. what about adjusting the cam gears. i know that advancing the intake side should give you a little bit of low end, but how much should i advance it if it do?

I haven't tested enough cam settings on the M42 to give you a good answer but play around with it a bit and clock some acceleration times and test yourself, then let us know ;) :)
