Ok, so i bought a 318is about a month ago, and within a couple miles of driving it, the engine hits peak temp...36 days later, after getting a new head, we started it. I got off work and my brother and myself change the oil, and put distilled water into the radiator...
Start it up and yay it runs...however it idles a little rough, starts no problem. Anyway after maybe 2 minutes it starts running some white smoke, and after about 3-4 minutes it gets thicker, and at about 6 minutes it gets pretty thick.
Purely white, smells like oil, and there is no dripping coming from the pipe, no steam, which it was doing when we had the cracked cylinder head on it.

Any ideas?

I'm assuming you put in all new gaskets, but if not, I bet thats the problem. Also, the valve guide seals may be worn if the "new" head wasn't in very good shape of hasn't been used in awhile.
