My e30 convertible came with an M-Tech I wheel which id like to remove and put the stock airbag wheel back in. I tried to do this however the airbag wheel seemed to drag with a lot of friction.. with that said, I'm looking to see if anyone has or can point me towards an assembly diagram to make sure I have all the right parts in order

Do you have the correct spacers? There should be a small ring spacer that fits under the airbag wheel. It's part #4 in this diagram (http://bmwfans.info/parts-catalog/E30-2-doors/USA/318is-M42/1991/browse/steering/steer_col_steer_spin_upper_2/).
The wheel itself is not represented in that diagram, but it's fastened by nut #2 & wave washer #3 and sits on top of spacer #4 (BMW calls it a "14mm ring").
Not sure if you know this, but the airbag control stalks are not the same as the non-airbag ones. The airbag wheel is deeper than the non-AB wheel, so the matching stalks reach further toward the driver.

this is a great start, thanks very much. I'm pretty sure that # ring is not in there right now so that would explain it. Is this the same ring thats required for the Mtech wheels as well? I remember buying one for the mtech on a another project car which needed it in order to eliminate the wobbling of the wheel

I believe they are the same. I had to use two in mine - one under the wheel and one above it.
