weld up my own custom oil pan that is wider at the bottom but with about 2 more inches of ground clearance. Is there something in the upper pan that sits too low for this to work?

You would have to re-design and fabricate a new oil pick-up tube.

would simply shortening the pick-up tube not work? what about setting it at more of an angle inside the pan? Anyone have an extra pan laying around that they could give me some measurments of the inside? or just find the volume for me ;)
