What are your thoughts on replacing the exhaust manifold studs with grade 8 bolts.

I'd stick with the studs. They're easier to get off later and they're not as vulnerable to heat cycling. Studs are generally far stronger than bolts just due to being in tension - they don't get twisted by the torque as much as a bolt does.
